Three alternative recipes to try this National Baking Week

Baking is something we all take great pride in, and something that’s central to our cuisine and culture (GBBO, anyone?).

It’s a great way to pass the time with family and friends, and it’s also a sure way to impress others — if you can pull it off.

National Baking Week falls between October 15-23, giving everyone across the nation the opportunity to don the aprons, dust off the weighing scales and fire up the oven.

We’ve put together three alternative baking recipes that give a different take on our favourite traditional oven creations for you to try this National Baking Week:

Avocado and lime cheesecake

This recipe does away with the traditional dairy, flour and sugar ingredients, to create a striking colourful alternative of an old favourite. It’s healthier, suitable for diabetics + coeliacs and perhaps more importantly — tasty! 


For the base:

  • 125g pecans, soaked and dried
  • 45g desiccated coconut
  • 70g cacao nibs
  • 185g pitted dates
  • 3 tbsp coconut oil

For the filling:

  • 560g avocado flesh (around 5 medium avocados)
  • 200ml lime juice
  • 175ml coconut oil
  • 1 tsp lime zest
  • 190g honey


  • Roast the pecans and desiccated coconut in an oven tray, then add to a food processor with the rest of the base ingredients and blend until smooth
  • Line a cake tin with baking paper and tip in the base mixture. Spread evenly, then refrigerate
  • Blend all the ingredients for the filling until smooth and silky and pour into the cake tin
  • Cover with cling film leave in the fridge for a few hours or overnight, then serve

Chickpea flour brownies

The brownie, a staple of the baking world, is simple to prepare and easy to execute for novices and experts alike. This take on the classic is just as easy to make, but instead of wheat flour, we’ve got an alternative recipe that uses the lesser-known chickpea flour, which is equally effective and also gluten-free.


  • 120g sugar
  • 150g butter
  • 3 eggs
  • 60g dark chocolate
  • 90g chickpea flour
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 4 tsp cocoa powder
  • 1 tsp instant coffee


  • Preheat oven to 175°
  • Microwave butter and dark chocolate for 30 seconds until it starts to melt
  • Beat eggs and sugar together, then slowly add the chocolate and vanilla extract and whisk
  • Add the chickpea flour, cocoa powder, coffee powder and salt, and fold in
  • Bake for 30 minutes, let them cool then get stuck in!

Vegan chocolate cake

Ever-popular but extremely rich and indulgent, chocolate cake is great to taste but perhaps less forgiving on the waistline! However, this version will allow you to keep enjoying this favourite with some healthier ingredients to reduce the calorie count. This avocado cake swaps out milk, butter and flour with free from alternatives, such as soya milk and vegetable oil, to create a fresh and tasty gluten-free dairy-free treat.


For the cake:

  • 150g avocado (one large)
  • 300g muscovado sugar
  • 350g gluten-free flour
  • 150ml vegetable oil
  • 50g cocoa powder
  • 1 tsp bicarbonate of soda
  • 2 tsp baking powder
  • 400ml soya milk
  • 150ml vegetable oil
  • 2 tsp vanilla extract

For the frosting:

  • 85g mashed ripe avocado (1/2 large avocado)
  • 100g dark chocolate
  • 25g cocoa powder
  • 125ml soya milk
  • 200g icing sugar
  • 1 tsp vanilla extract


  • Preheat the oven to 160°, grease the cake tin with dairy-free sunflower spread and line baking paper
  • Blend the avocado and muscovado sugar until smooth, add gluten-free flour and the rest of the cake ingredients, blending until smooth
  • Transfer the mix into your tin and bake for 25 minutes, then cool
  • Beat the avocado and sunflower spread until smooth and creamy
  • Melt 200g of chocolate, simmer soya milk, beat in cocoa powder until smooth
  • Add avocado mix, icing sugar, melted chocolate and vanilla extract to sandwich and top the cake
  • Enjoy!

We can’t guarantee you’ll be the next Paul Hollywood, Mary Berry or Nadiya Hussein, but these recipes will no doubt get you in the spirit and trying something different this National Baking Week.
