Carrot and Ginger Soup:

Ingredients:

  • 500g carrots, peeled & roughly chopped
  • 1 small to medium apple, cored and diced
  • 1 medium onion, diced
  • 3 tbsp higher heat oil
  • 3 cups vegetable broth
  • 1 cup of unsweetened vanilla almond milk
  • 1 tsp minced garlic
  • 1 tbsp fresh minced ginger
  • 1 tsp turmeric

Method:

  • Preheat oven to 200°C
  • Place the chopped carrots, onion, and apple on a lined baking sheet. Drizzle with oil and season, tossing to combine. Roast for 30 minutes, tossing halfway through
  • Remove from oven and set aside to cool
  • Add the vegetables, broth, milk, garlic, ginger and turmeric to the blender. Blend until smooth and creamy

Mini Gram Flour Pancakes with Hummus

Ingredients:

  • 1 ¼ cups of gram flour    
  • ½ tsp of cayenne pepper
  • 2 tsp of chopped coriander
  • 5 cloves of garlic cloves, minced
  • 1 tsp fresh or dried ginger
  • 3 tsp of olive oil
  • ½ tsp of sea salt
  • 1 small red onion, very finely chopped

Method:

  • Put the chick pea flour in a large mixing bowl and add 1 cup water, stir to make a soft batter. Add the salt, cayenne pepper, onion, ginger, and coriander
  • Mix and leave for 15 minutes
  • Place ½ tsp of olive oil in a large frying pan, over medium heat
  • Stir once and place about 1/3 cup batter into centre of frying pan. Treat as if making a pancake
  • Cook for 3 minutes. Turnover and cook, for one minute until golden
  • Repeat with remaining batter, stirring before using

Baked Kale Chips

Ingredients:

  • Kale
  • Lemon Juice
  • Olive Oil
  • Sea salt

Method:

  • Preheat oven to 300°F
  • Rinse and dry the kale, then remove the stems and tough centre ribs.  Cut into large pieces, toss with lemon juice and olive oil in a bowl then sprinkle with sea salt
  • Arrange leaves in a single layer on a large baking sheet.  Bake for 20 minutes, or until crisp, then place baking sheet on a rack to cool
