How to get the perfect chicken wings this summer

Summer is here again! That means that for a few short weeks, it's time to grab a beer and gather around the BBQ in your back garden.

One of my absolute favourite things to cook on the BBQ is chicken wings; juicy meat with crispy skin and no cutlery required! Chicken wings are the perfect dish for any outdoor feast, whether you’ve cooked plain with some salt and pepper or jazzed them up with some simple marinades.

I’ve found that beer works brilliantly as a chicken marinade base, so here are a couple of recipes to try with your favourite pale ale!

How to make hot and spicy chicken wings

These wings had enough kick for me, but if you are a real spice fiend, reserve some marinade in the saucepan. While the wings are baking in the oven, gently heat the reserved marinade to reduce it down to a thicker spicy sauce. Use this to coat your grilled wings or as a baste on the BBQ for some extra heat.

What you’ll need

  • 60g butter
  • 1 bottle of Tabasco® red pepper sauce – or another hot sauce of choice
  • 1 tbsp. white vinegar
  • ¼ tbsp. celery salt
  • 2 tbsp. garlic powder
  • 2 tbsp. onion powder
  • 1 bottle of pale ale


  1. Melt 60g butter in a saucepan
  2. Add the hot sauce, white vinegar, celery salt, garlic powder, onion powder and pale ale to the butter and stir to combine
  3. Chop the chicken wings into individual sections
  4. Place the wings in an oven-proof dish
  5. Pour the marinade over the wings, ensuring all the chicken is fully coated
  6. Place in the oven at 1800C for 25 minutes
  7. Stir the marinade whilst cooking to keep the wings coated
  8. Remove the wings from the oven and finish on the BBQ to crisp the skin
  9. Serve with celery sticks and blue cheese dip

How to make blue cheese sauce

To give the flavours plenty of time to develop, make sure you prep this sauce a few hours before you’ll be serving it.


  • 150ml sour cream
  • 90g crumbled blue cheese (I'd recommend something strong and crumbly like Stilton)
  • 1 tbsp. garlic powder


  1. Mix together all ingredients until relatively smooth
  2. Leave in the fridge until needed – simple!

How to make Lebanese-style chicken wings

What you’ll need

  • 1kg chicken wings
  • 1 bottle of pale ale
  • 5 garlic cloves – minced
  • 2 tbsp. cumin
  • 2 tbsp. coriander
  • Juice and zest of 1 lemon
  • Salt and pepper


  1. Chop the chicken wings at the joints
  2. Spread the wing pieces in a large ovenproof dish/roasting pan
  3. Add the pale ale, garlic cloves, cumin, coriander, lemon juice and zest, and salt and pepper into a bowl then stir together to create the marinade
  4. Pour the marinade over the chicken, ensuring all of the wings are coated
  5. Place the wings in the oven at 1800C for 25 minutes
  6. Stir the marinade whilst cooking to keep the wings coated
  7. Remove the wings from the oven and finish on the BBQ to crisp the skin
  8. Serve with a fresh green salad and a sharp vinaigrette
