This Christmas, why not try something a little different with your festive dessert?

Use chocolate and Christmas pudding to make this festive Rocky Road, as created by Lucy Parissi from Supergolden Bakes in the below video! Perfect for sharing or gifting!

How to make Christmas Rocky Road


  • 50g unsalted butter
  • 3 tbsp golden syrup
  • 400g dark chocolate, chopped
  • 200g Christmas pudding, crumbled into small bits
  • 200g mini marshmallows
  • 100g walnut pieces
  • 200g milk chocolate melted, optional
  • Handful festive sprinkles to decorate


  1. Lightly grease a 19x28cm tin or square brownie pan and line with baking paper
  2. Put the honey, butter and dark chocolate in a large bowl and microwave for one minute. Stir and microwave for another 30-60 seconds. Stir again until melted and smooth
  3. Add the marshmallows, Christmas pudding and walnuts and gently fold them into the chocolate
  4. Spread the mixture into the prepared tin, pressing down to level
  5. If you like a smooth surface, then melt the milk chocolate and spread over the rocky road. Add a handful of festive sprinkles over the top before the chocolate sets
  6. Put the rocky road in the fridge for two hours or until set. Take out of the fridge for at least an hour before slicing
  7. Run a knife under hot water and cut the Rocky Road into small squares. Store the rocky road in the fridge for up to three days
